Here is what I did. I set up my departments and e-mail in the admin panel.
In the settings section(tab), there is an outgoing email section where you can assign a global default outgoing e-mail for all departments.
Select a noreply@your domain e-mail. Of course the global setting can be overridden individually if you so choose.
